Acetaldehyde is a colorless, volatile compound found in wine that can be formed by yeast. Low levels of acetaldehyde are ideal in red and white wines as it can bring a pleasant, fruity aroma to a wine. High levels of acetaldehyde are acceptable for dessert wines and sherry which can have a rotten apple aroma.
