Consulting in Winemaking
Need a little bit of help with your winemaking technique? Is this your first season making wine and you aren’t sure where to start? Do you want help and guidance perfecting your wines? After several requests, Vinmetrica is now offering Wine Consulting Services for our customers. With over 30 years of combined experience making wine, chances are we can help you. Since we own a commercial winery as well (Little Oaks Winery –, now in its 8th year!), we have a wealth of experience to draw on.

We can help you fine tune your processes, answer questions about problem wines, and provide general guidance about all aspects of winemaking. This can be accomplished by phone calls, visits to your winemaking facilities (San Diego County only) and/or by sending in samples of your wines for us to test in our state of the art laboratory.

We can advise on all aspects of winemaking including:

  • Pre-harvest activities and testing
  • Adjusting musts pre-ferment
  • Yeast selection and inoculation
  • Malolactic fermentation
  • Sulfite levels and proper oxygen control
  • Improving your wine’s “nose”, complexity and mouthfeel
  • Carrying out blending and tasting trials
  • Successful stabilization and ageing before and after bottling

Wine testing:
We are experts in chemical and microbiologic testing of wine, beer, mead, cider or other beverages. We can advise you in creating a test panel for your samples to guide your efforts to achieve your objectives in fermentation. In addition to the tests offered on our Laboratory Services page, we have the ability to run a wide range of tests in our state of the art laboratory. In general we require significant numbers of samples to justify running these as a service.
