The Importance of Testing for Dissolved Oxygen in your Wine or Beer.
Dissolved oxygen (DO) has numerous effects on wine, some desirable, some definitely not. Depending on the type of wine and its characteristics, controlled exposure to oxygen plays a beneficial role in wine quality such as influencing color stability and suppleness. However, too much oxygen can lead to premature deterioration, browning, and acetaldehyde formation. At time of bottling, for example, it is generally desirable to keep DO below 10% saturation.
DO can be measured throughout the bottling process to ensure oxygen uptake is minimized. Careful management of DO during the entire fermentation and aging process will ensure best stability and outcome for your wine.

Simple to Use:
- Connect the probe to the meter.
- Press the power button to turn on.
- Calibrate 100% DO saturation.
- Calibrate 0% DO saturation. (Optional)
- Rinse probe.
- Place 2 mL wine in vial and insert probe, or place probe directly in bulk wine.
- Measure %DO saturation in wine sample.
How It Works
The DOM’s Probe consists of an internal light source that illuminates an optical disk in the end cap. This disk is impregnated with a fluorescent dye that is quenched by oxygen. The level of fluorescence from the disk is related to the oxygen level of the air or solution in contact with the disk. The probe reads and converts the fluorescence to electrical signals that are processed by the meter to determine the DO levels.
